Ingredients:
1 ½ cups mixed berries (strawberries, raspberries, and blueberries)
2 cups heavy whipping cream
8 oz cream cheese, softened
½ cup powdered sugar
1 tablespoon vanilla extract
2 teaspoons gelatin powder
2 tablespoons warm water
1 cup graham cracker crumbs
½ cup unsalted butter, melted
Fresh berries for topping
Directions:
Start by making the crust. In a bowl, mix the graham cracker crumbs with melted butter until combined. Press the mixture into the bottom of a springform pan, creating a compact layer. Chill in the refrigerator while you prepare the mousse.
In a small bowl, dissolve the gelatin powder in warm water and let it bloom for about 5 minutes.
In a separate large bowl, whip the heavy cream until soft peaks form. Set aside.
In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
Gently heat the gelatin mixture in the microwave for about 15 seconds, then slowly incorporate it into the cream cheese mixture, stirring well.
