Ingredient Quantity
Baby spinach 1 cup
Sun-dried tomatoes ¼ cup
Red pepper flakes To taste
Instructions:
Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Season shrimp with salt, pepper, and Italian seasoning. Add shrimp to skillet and cook for 2-3 minutes per side, or until pink and fully cooked. Remove shrimp from skillet and set aside.
Prepare the Alfredo Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and cook for 30 seconds, or until fragrant. Stir in heavy cream, garlic powder, onion powder, and a pinch of salt and pepper. Bring to a simmer. Gradually stir in Parmesan cheese, allowing it to melt into the sauce.
Cook the Tortellini: While sauce is simmering, cook tortellini according to package instructions until al dente. Drain and set aside.
Combine the Tortellini, Shrimp, and Sauce: Add cooked tortellini to skillet with Alfredo sauce, stirring gently to coat pasta. Return cooked shrimp to skillet and toss everything together.
Add the Cheese and Bake: Preheat oven’s broiler to high. Sprinkle mozzarella cheese over top of tortellini and shrimp mixture. Transfer skillet to oven and broil for 2-3 minutes, or until cheese is melted and bubbly with golden spots.
Garnish and Serve: Remove skillet from oven and garnish with fresh parsley. Serve Cheesy Shrimp Tortellini Alfredo hot and enjoy!
