Basic rule: first, know that the best

fries are those that have undergone two heat treatments.

Start by frying them at a low temperature (halfway through cooking).

Then remove them and place them on paper towels to absorb the excess oil.

After cooling, move on to the second cooking step:

Dip the fries again in very hot oil to make them crispy.
