2 lbs ground beef (80/20 blend)
1 cup breadcrumbs
2 large eggs
1 cup corn kernels (canned or frozen)
1 cup black beans, rinsed and drained
1 medium onion, finely diced
1 bell pepper, finely diced
2 garlic cloves, minced
1 packet (1 oz) taco seasoning mix
½ cup salsa
½ cup enchilada sauce (for topping)
Step by Step Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9×5 inch loaf pan.
In large bowl, combine ground beef, breadcrumbs, eggs, corn, black beans, onion, bell pepper, and minced garlic.
